In 1972, Joseph DeRosa opened the first Chancery Pub & Restaurant on Highway 20 in Racine, Wisconsin. The atmosphere was friendly and fun, characterized by the stained-glass tiffanies, copper bar, and peanut shells on the floor. Encouraged by the success of the first restaurant and the urging of Chancery customers, Joe built seven more Chancery locations from 1975-1998. Each of these restaurants was unique in decor and personality.
Over the past 50 years, the DeRosa Corporation grew to include eight Chancery Restaurants (casual dining), Port Washington's Smith Brothers Restaurant and Brewery, Eddie Martini's (a 1940's-styled supper club), four Jose's Blue Sombrero restaurants (Mexican Fusion restaurants), Seven Sisters Cafe and Cafe West (business industry contract feeding operation located in the Wauwatosa Children's Hospital Complex) and ParkSide 23 (a farm to table upscale casual dining restaurant).

Wauwatosa-based DeRosa Corporation was among the first to bring the casual dining restaurant concept to Wisconsin. With a unique philosophy highlighting the importance of people, place and product, DeRosa is known for embodying a playful refuse-to-grow-up approach in its brands, menus and amenities. Among the first to feature such brand innovations as peanuts on the floor, popcorn on the table, and its own craft brewery, DeRosa also helped pave the way for midwestern American fine dining, reaching national heights in service and reputation.
